I loved it!
I loved the super-sweet and moist topping with it's embedded fruit.
I loved the tender cake.
I loved everything about it!
I have tried many recipes for this classic cake.
None were as perfect as this one.
I kinda feel bad,because it's so easy and it starts with a boxed cake mix!

Best Pineapple Up-Side Down Cake.
SERVES 12
- 1/2 cup butter, melted
- 1 cup packed dark brown sugar
- 1 (20 ounce) can sliced pineapple
- 6-8 maraschino cherries, cut in half lengthwise
- 1 (18 ounce) package Duncan Hines Supreme pineapple cake mix
- 1 (5 ounce) box vanilla instant pudding mix
- 1 cup pineapple juice (use the juice from the canned pineapple w/ a little water added)
- 1/2 cup canola or veg oil
- 4 large eggs
- Preheat oven to 325 degrees Fahrenheit.
- Pour butter in a 9x13 pan .
- Sprinkle brown sugar evenly over butter in pan.
- Drain canned pineapple into a measuring cup.
- Place pineapple slices evenly in pan, covering the bottom of pan.
- Place the maraschino cherry halves in the center of the pineapple slices, cut side up.
- Combine the rest of ingredients in a large mixing bowl on slow speed for 30 seconds.
- Beat on medium speed for 2 minutes.
- Pour batter into pan.
- Bake for 45 to 55 minutes, or until a toothpick comes out clean.
- Cool 5 minutes , run a knife around the edges of the cake, and turn cake out onto a serving platter, pineapple side up.

ReplyDeleteOkay, first of all I am drooling all over my computer. My mom made the most amazing pineapple upside down cake too! She did it the hard way, and used a cast-iron skillet!

DeleteI've only ever had this once, made by a co-worker at a summer job. I asked her for the recipe the second I took a bite, it was so good. Unfortunately, I haven't had a chance to make it myself yet... but your photos might make me change that soon! Her recipe also starts with a box ;) Plus 7-Up, I think!

ReplyDeleteit is a nice texture but the cake mix has a fake pineapple taste to it :/ i would do the cake batter from scratch if i were you. it is much more natural tasting
ReplyDeleteI make this exact recipe all the time…my whole family plus me LOVES IT! I make it exactly as written except I use a plain yellow cake mix. Don’t use the pineapple flavored cake mix because you are correct with the funny taste.
DeleteI use Dunkin Hines yellow cake mix and use the pineapple juice from the can instead of water. This time I plan to add some buttermilk to make the whole cup. I wouldn’t think of using anything but a cast iron skillet 😊

ReplyDeleteAbsolutely love pineapple upside down cake; haven't added the pudding mix though, but can imagine the added density and moisture. I add chopped macadamia nuts for the topping (or bottoming... :c)...). gives a little variety in texture and is scrumptious! This has got my mouth watering. I'll have to make it SOON!

ReplyDeleteThis is a very good, easy recipe. Love using a cake mix to simplify making this cake. My husband took one to work and people there commented that it was the best pineapple upside down cake they had ever eaten!

My cake is in the oven now, I did make a few changes due to not having some ingredients on hand such as I used a box of yellow butter cake mix, also, drained crushed pineapple and I did not use the cherries... didn't have any. I will post back tomorrow and tell you the results. I hope it is as scrumptious as the one pictured.

It is so so delicious... perfect. I made it for co-workers, now they're asking to pay me to make it. Thank you so much for posting this. It's so darn delicious. I did make a couple of changes, I used golden butter cake mix instead of the pineapple, also crushed pineapples instead of rings and a little extra butter and brown sugar because I always just have to do extra. Btw, I only had Cook & Serve pudding and I was really upset and thought about going to the store but decided to just try it and it came out perfectly

ReplyDeleteIs the pudding mix a 5 ounce package or 1 ounce?? I had only 1 ounce packages and I put 5 packages in…it doesn’t seem right?
ReplyDeleteThis is hands down the "Best" pineapple upside down cake I've ever made! Took one to work and ended up making 8 more that week for people! I've tried using both 5oz & 3oz instant puddings and they both turned out great! I haven't made it yet with the pineapple cake mix but substituted Betty Crocker Super Moist Butter Recipe Yellow Cake mix instead. Cake is better eaten cold and the longer it sits in the fridge, the better it gets!

Is that batter supposed to be very thick? I'm really hoping this turns out because it sounds delicious.
