Batch Cooking (King Ranch Casserole)

Yesterday I showed you my 20lbs worth of cubed chicken breasts..
But I forgot to mention the 3 gallons of beautiful chicken broth at got out of it as well!
(vacuum sealed and in the freezer now, of course)

Ain't it purdy?

The first recipe I used the Mountain-o-Chicken in was my King Ranch Casserole.

This recipe also included me dicing 14 cups of diced bell peppers, onions & celery. whew!
(only because I quadrupled the recipe.. don't be scared.)

Here are three of the 5 I made today,
a pesky chicken pot pie got in the photo too...
thats a recipe for tomorrow.

I flash froze them.
Then sealed em right on up...
If you are careful you can find casserole dishes that will fit in your vacuum sealer bags.
I made a few smaller ones to send with Worker #1 while he is staying with his Uncle and working in Houston this summer..
poor boy has to get some home cooked foods!
See how well it sealed? there is no air inside the package at all..
thus no freezer burn!
I LOVE it!!!
This is the one I cooked for dinner..
Cheesy, mildly spicy, comfort food!

Dana's King Ranch Casserole

SERVES 6
1 cup onion, diced
1 cup Green Bell pepper diced
1 cup red bell pepper, diced
1 cup celery, diced
1 can cream of celery soup
1 can cream of chicken soup
1 lb cheddar cheese
2 cups cooked chicken
1 can rotel tomatoes with green chilies
1 small can sliced black olives (optional)
1 clove garlic, minced
2 tablespoons chili powder
12 corn tortillas, torn in strips (the Man of my dreams prefers flour tortillas)

**saute onion, bell peppers, garlic and celery until tender-crisp.
**Add soups, tomatoes, chiles, and spices.
**Line bottom of 9x13 pan with tortilla strips
**Spread half of chicken over tortillas and top with sauce, then half of cheese.

Cover with another layer of tortillas, chicken, sauce and cheese. (think lasagna layering!)

Bake at 350 degrees for 30 minutes until bubbly.

I like to serve it with sour cream. & chips. Enjoy!

If frozen, thaw in fridge then cook as directed.

  1. Oh, that casserole looks great! Also, I really like your wooden spoon in the celery/onion photo. Love the chick broth packages, too. How did you seal those up without spilling the liquid? I've frozen broth in ice cube trays and then bagged the cubes. I think I need to go buy that sealer now!

  2. I never really got into making cassaroles, but now that I have to find filling tasty QUICK recipes to use when I really don't want to cook, I think I'm going to have to try this one!! It looks very comforting!

  3. Oh yes, and I'm quite jealous of your Vacu-Sealer! One of these days I'll break down and splurge on one. They really are worth their weight in gold.

    I set my vacuum sealer up on a turned over stock pot, so the top of the bag reaches the sealer without having to turn it on its side.. I jusy fold the top over into the sealer and set the sealer to "moist" (that means it seals a little bit longer in case its wet.

    I almost always do two deals on these kind of bags for added protection... broth could really make a mess if something happened to that bit broth balloon before it's frozen! ;) I hope that makes sense lol

    Oh.... I may be having a giva-a-way soon.... think sealer! **wink** keep your fingers crossed.. I should know something by the end of the week! :)

    I made this last night and it is awesomely yummy. I just wanted to ask... in the directions it mentions chicken broth... but theres no broth in the ingredient list... I didnt use any but wanted to check and see if it is supposed to be in there. Even my super picky hubby agreed that this recipe is a keeper

    my original recipe called for 1tablespoon of chicken broth to be added too...
    I realized that I never add it, so I took it off of the ingredient list... but missed it in the directions.. (fixed it now)
