Loaded Baked Potato Salad!

Yummm!
I love Potato Salad!

But this potato salad is a little different than the norm.
It's just like a loaded Baked potato!

Try it!
You'll love it!
A great change!
Dana's Loaded Baked Potato Salad

Ingredients

  • 3-4 large baked potatoes, cooled and cubed
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 8-10 slices cooked bacon, crumbled
  • 6 ounces shredded cheddar cheese, divided
  • 3 green onions, sliced
  • 1/2 teaspoon fresh ground black pepper
  • 1 dash celery salt or seasoning salt
  • 1 dash garlic powder
  • 1 dash paprika or cayenne pepper
Directions
  1. Gently stir together all the ingredients in a large bowl using a large spoon, reserving a little cheddar, green onion and bacon for garnish.
  2. Transfer to a serving dish.
  3. Top with reserved shredded cheddar, green onion slices and bacon.
  4. Enjoy!

BLT Pasta Salad

When my tomatoes are ripe, I practically live on BLT's.
All summer long, I eat them! I LOVE em!
When I found this recipe hidden in the back of my mothers recipe cards,
I knew I had to make it.

This is a wonderfully refreshing summer salad.
It's great to take to picnics or cook-outs.


BLT Pasta Salad
serves 10-12
  • 1 (10-12 ounce) package pasta cooked and drain
  • 1 pound (10-12 slices) bacon, cooked and crumbled
  • 1 cup mayonnaise
  • 1/4 cup lemon juice
  • 2 teaspoons sugar
  • 1 large tomato, seeded and chopped
  • 1/2 cup green onion, sliced
  • 2 teaspoons chicken flavor instant bouillon
  • 4 cups lettuce, thinly sliced
  • Black Pepper, freshly ground is best, to taste
  1. Combine mayo, lemon juice, sugar and bouillon for the dressing.
  2. Combine all remaining ingredients -- wait until you are ready to serve before mixing in the lettuce. so it doesn't wilt.
  3. ENJOY!!

It's All Greek to Me.. (Greek Salad)

On my quest to re-create dishes from my favorite restaurants in the big city, I couldn't leave out this wonderful Greek Salad.

My BFF Marlene and I often went to our favorite seafood restaurant just to eat their Greek Salad.
It was special.. the waiter would prepare it table-side with great flair.
This Greek dressing is a little more tart than others.

My mouth is watering just thinking about it!

'It's All Greek to Me' Greek Salad


Dressing
  • 3/4 cup olive oil
  • 4 tablespoons fresh lemon juice
  • 2 teaspoons dried oregano (or 4 teaspoons fresh)
  • 4teaspoons fresh minced garlic
  • 1 teaspoon dried basil (or 2 teaspoons fresh)
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt (to taste)
  • 1 teaspoon sugar
  • 1/2 teaspoon fresh ground black pepper (to taste)
  1. Blend all ingredients together in a blender.
  2. Refrigerate for at least one hour to let the flavors bloom.

Salad.
  • 2 heads Romain Lettuce, cut or torn into bite-sized pieces.
  • 1 large cucumber (I prefer the English Cucumbers) seeded and sliced.
  • 3 tomatoes sliced (I like a few handfuls of grape tomatoes)
  • 1 green Bell pepper, seeded & sliced
  • 1 red Bell pepper, seeded & sliced.
  • 1 red onion thinly sliced.
  • 1/2 pound of Feta cheese, crumbled
  • 1 cup Kalamata Olives.
  • 2 tablespoons capers
  • 4-6 pepperochini peppers
  • 4-6 anchovy fillets (optional) blech!
  1. Toss all ingredients together with the dressing.
  2. Serve with a nice crusty bread.
  3. Enjoy!!
Hint... throw in some shrimp for a whole meal!
