Cheap Food I'd Eat, Even if I Wasn't Broke. (Ramen Fried "Rice")

Being the Homesteading Housewife, I lecture and preach about cooking from scratch.
I go on and on about the evils of processed, pre-made "convenience" foods.

Well...
I have a confession to make...

I love Ramen noodles.
There, I said it.

I have decided to try to re-make these beloved sodium-laden noodles into new dishes.

Tonight, I made a wonderful meal!
It tastes great!
and is cheap cheap cheap!
Tastes just like fried rice, but is ready in a fraction of the time!

Here goes....


Ramen Fried "Rice"
(serves 4)

Ingredients
  • 2 (3 ounce) packages Ramen noodles (I like oriental flavor)
  • 3/4 cup frozen peas
  • 1 small can sliced water chestnuts (optional)
  • 4 eggs, beaten
  • 2 teaspoons sesame oil, divided
  • 1 pinch pepper
  • 2 tablespoons peanut oil (can use canola oil)
  • 8 green onions, finely chopped
  • 2 teaspoons chopped garlic
  • 1 cup diced ham, pork, cooked chicken or shrimp (optional)
  • 2-3 tablespoons soy sauce
  • Boiling water
Directions
  1. Break the noodle blocks into about 6 pieces in a bowl, sprinkle with the contents of the seasoning packets and cover with boiling water.
  2. Give it a stir and let soak while you prepare the rest of the recipe.
  3. Rinse peas with warm water to defrost.
  4. Beat together the eggs, 1 tsp sesame oil, pepper and set aside.
  5. Heat a wok or large skillet and add the peanut oil.
  6. Add the garlic and green onions and stir-fry for about 1 minute.
  7. Add meat, if using, peas, and water chestnuts and stir fry until hot, about 2-3 minutes.
  8. Drain the noodles well, add to the skillet.
  9. Drizzle with remaining 1 tsp sesame oil, stir fry for another 2-4 minutes, stirring constantly.
  10. Stir in the soy sauce until well distributed.
  11. Pour the eggs into the skillet and continue to cook and stir, until the bits of egg are cooked.
  12. Serve at once.
  13. Enjoy!

  2. Come on, WHO doesn't love Ramen Noodles? ;D It's so bad; it's so good! I had that for breakfast all the mornings my grandmother took care of me when we lived in Hong Kong. If I can refrain from eating the noodles long enough to make this, I may just try the recipe!

  4. That actually looks very good! I would have never thought of that and I bet it could take the place of Lo Mein noodles that I so love to eat!

  5. I made this a few weeks ago and am planning to make it again this coming week. It was fast and delicious! I was surprised how yummy it was. My simi-picky husband was a little less impressed but our 2 kids (ages 2 & almost 4) Loved it as much as I did! :)

This is one frugal thing I do with ramen noodles, I throw in any left over vegetables from dinner, Ihave also found that prepared slaw from the night before, tastes great stirred into my bowl of ramen the next day, I always have leftover slaw that gets throwed out because it sits in the fridge, right now you are probably saying, with mayo in it, yuck, but what is mayo but eggs and oil, already present in most stir Fry's!
