And it's definitely too yummy for our own good!
This is a great dish to let the kids make! Mine have all made it and it always turns out GREAT!
And they love to cook something the whole family devourers.
Get your kids cooking with you!! You won't regret it!
" Scalloped Corn"
2 cans corn "drained"1 can cream-style corn
some diced bell pepper (optional, add as much or as little as you want)
Diced Onion (optional, add as much or as little as you want)
2 eggs
1/4 cup melted butter
1 cup sour cream
a shake or two of salt & pepper
1 box corn bread mix (11 oz) I like Jiffy Brand best!
I also like to add a dash of cayenne pepper,
do whatever sounds good to you.
Mix all the ingredients together.
Pour into 8x8 or 9x9 baking dish
Bake 35-40min at 350 degrees or until a knife inserted in the center comes out clean.
I always at least double this and use a 9x13 baking dish....
Its great for a big crowd! but cooking times will get longer too.

Yes your way is good... blah blah blah..
I think bell pepper is a very good flavor combination with sweet corn,
and I always ALWAYS add a pinch of cayenne pepper to all corn dishes... not enough to make it hot.. but it really deepens the flavor...
Don't worry honey.. I still love you, even if my way is better.
and make no mistake about it.. My way IS BETTER!
OMG! This looks like a recipe I have been looking for, for ages. I had something that looked like this when and friend and I visited her uncle's farm in Independence, WI. I didn't know what it was called. I just got back from the grocery, but I'm going to have to go back tomorrow to get the corn so I can try this and see if it is what I remember.

I have used a very similiar recipe known as "New Salem Corn Casserole." I may have to try it with the peppers and onions. Whatever its called, it is a good one!
ReplyDeleteI had a dish similar to this during the summer at a party, and it was amazing! Unfortunately I lost the recipe. Thanks for posting this. Gonna write it down and try cooking in. By the way....everyone reading this....The Homesteading Housewife's recipes are AWESOME!

Right, Bethany. No bell peppper or cayenne. But I do use onion. I make a similar dish, but have a couple of differences. I use only 1can of whole kernal (NOT drained)and the rest is the same (except the peppers). After the corn, eggs and cornbread is mixed up and in the dish, I saute the chopped onions in melted butter and then mix that with the sour cream and drop it on top the corn in little "globs". Sometimes I add grated cheese when its done and turn the broiler on for a few seconds to melt it. Also, I've found it cooks faster if in a shallow casserole vs a deep one. Yum. I may have to make it today!

ReplyDeleteOkay, this looks good. I've never heard of scalloped corn, but I love scalloped potatoes.
ReplyDeleteThis recipe is similar to what my aunt makes every Thanksgiving. She calls hers Corn Pudding. Never would give me the recipe. Haha, now I know how to make it as well! She never puts the peppers or onions in it but I might give that a try. At least trying the onions in it! Thanks for posting it.
