This Lemon cake is for serious lemon-lovers only!
It is lemon on top of lemon, glazed in lemon.
Extreme Lemon Cake
Ingredients
- 1 (18 ounce) box Duncan Hines (or your favorite) lemon cake mix
- 1 small box instant lemon pudding
- 4 large eggs
- 1 cup sour cream
- 3 teaspoons lemon extract (optional)
- juice of 1 lemon
- zest of 1 lemon,
- 1/2 cup vegetable oil
- 2 cups powdered sugar
- zest of one lemon
- fresh lemon juice
- Preheat oven as directed on the cake mix box.
- Mix all ingredients together.
- Beat on medium speed for 2 minutes.
- Pour into buttered pan (I use a bunt pan).
- Bake for the time specified on the cake mix box.
- mix powdered sugar and lemon zest in a small bowl.
- add lemon juice, one Teaspoon at a time, stirring well after each addition.
- continue adding lemon juice a LITTLE at a time until it is the consistency of a thick cake batter.
- Drizzle glaze over the top of cooled cake allowing it to run down the sides.
- ENJOY!!
- Try not to lick the plate.
- Enjoy some more.
